What will you do with all those boiled eggs?

In our family, we don’t hide our dyed eggs for Easter because then you have rotting eggs in your yard (the ones your three-year-old didn’t find….what a big responsibility for a three-year-old.  We also don’t hide chocolate…that would just be wasteful.  In fact, I confiscate most chocolate because it’s really messy and the boy doesn’t like it anyway.  Well, not as much as I like it.  Chocolate needs to be appreciated.  That is also why our Easter Bunny doesn’t buy cheap chocolate.) 

After the kids see the boiled eggs (not even sure we are going to allow them to touch the eggs other than to help with the dying process), I make deviled eggs.  And I believe my deviled eggs are the best. Why would I think that?  Because I love them, because my family requests them, because my friend Angela (former roommate) often asked me to make them and because they have bacon and bacon makes everything better.

I’ve been warming up for Easter so I made some for my elderly friends this past week (and a few for us).

They aren’t too hard to make but I “guesstimate” on the measurements.

I usually make at least a dozen eggs at once. ( Seriously, my family cannot get enough of these eggs and there have been suedo fights about who gets the leftovers.)

Real bacon bits (I have even fried the bacon myself to add to the eggs)

1/2 teaspoon of mustard

2 large spoonfuls of mayonnaise (don’t use that Miracle Whip crap. I use Drakes mayonnaise)

Salt and Pepper (but not too much)

Combine all these ingredients and mash or whip (use a masher or a hand mixer).  I use my Pampered Chef medium scoop or the Easy Accent Decorator to fill my eggs (Use the Easy Accent Decorator if you are feeling fancy).  To complete the recipe, sprinkle with Tony Chachere’s Creole Seasoning (It’s a southern thing so I’m not sure you can get it “up north”)

Easter Sunday Article

Wow, I didn’t even realize the paper (Hays Free Press) posted my article about Easter Sunday Click Here.  Pastor Robin saw it before I did.  (By the way, thanks for posting the link on your blog!).

And I am working on a book review to be publshed in the “All Around Hays” May edition.   Some of my writing it taking off.

Easter Sunday

 Here are a few pictures from Easter Sunday.  PromiseLand San Marcos packed the P.A.C. (Performing Arts Center).  The service was great.  The atmosphere was celebratory.  I have the feeling of a new season, not just physically.

My mom tucked in Evan’s shirt before Sunday school and told him that he looked liked a 6 year old with his shirt tucked in (he’s 4).  When he went to Sunday School, his mom asked him if Nana tucked his shirt in.  He told her “yes” and that he looks like he’s 6 years old.   Why do kids always want to be older?  Just enjoy being 4.  Also the Easter Bunny** (aka, Pappa) hid eggs in the back yard.  Evan waited until after lunch to go look for the eggs.  Naturally, Nana and Pappa wanted to take pictures.  He was out in the back yard by himself picking up eggs.  Dennis asked the family if he was suppose to start…it was funny.  Maybe you had to be there.    What was even funnier is he was the only kid in this hunt but he was racing around as if he was competing with 10 other kids.

We invited Dennis’ brother and girlfriend over for lunch.  They actually came.  We had a very enjoyable afternoon with both our families, playing games and eating chocolate. 

Easter Sunday Preparations

Hey Everyone!  If you are a member of PromiseLand San Marcos, then hopefully you have already heard about our Pack the PAC campaign.  PromiseLand San Marcos will be holding Easter Sunday Service at the Performing Arts Center in Kyle so everyone (all three service) can join together to worship and celebrate Easter Sunday. 

Many of us live in the Kyle and Buda area and this is an opportunity for us to invite our neighbors, friends and family to worship with us.  Pastor Robin has ordered cards and door hangers to pass out.

 I want to get involved.  Here’s the plan, starting with the apartment complex we live in, I am going to prayer walk the complex (this week) and when then I will hang door hangers on every door (in the next two weeks).  If anyone else would like help prayer walking and hanging door hangers in your neighborhood, please let me know.  I would love to help.  Post a comment and identify your neighborhood.  Combining prayer with action (faith with works) and the principle of agreement (two or three in agreement) we can Pack the PAC.

I am still developing the prayer focus for my walk but it will be along the lines of “God, please prepare the hearts of these families and individuals to receive the seed and respond”.
